ROQUEFORT LE VIEUX BERGER
The handmade Roquefort "Le Vieux Berger" is manufactured by a Cheesemaker and has the distinctive features of preserving traditional methods, handing down and adapting them over 3 generations by the COMBES family-run firm.
Next to Rodez is situated the Farguette dairy where all the steps involved in the cheese making are carried out by hand: simple and genuine gestures that ensure a quality cheese.
Then the loaves of cheese are sent to Roquefort to be ripened in the cave ventilated by cool and moist air. At this stage the art of the Ripening Expert plays a decisive role in the maturing of the Vieux Berger. Enjoy a free visit to the cave on your own with a gallery displaying explanatory panels and openings to the packaging workshops, followed by the screening of a documentary film tracing the COMBES family history and showing the traditional Vieux Berger cheese making.
